WELEETKA HAS BEEN RAVAGED BY FIRES IN RECENT DAYS. Two house fires, along with the Masonic Building on Main Street in the quiet rural community, were a total loss. First responders from surrounding counties all came and assisted with the blaze downtown. The Masonic building, as well as the homes, were a total loss. No one was injured in the fires. 1 ¾ cups cornmeal 1 teaspoon baking powder ½ cup flour 2 cups buttermilk 1 tablespoon sugar 1 egg 1 teaspoon salt 3 tablespoons vegetable oil ½ teaspoon soda Combine dry ingredients. Whisk together buttermilk and egg. Add to cornbread mixture, stirring just until combined. Place oil into a cast-iron skillet or 9-inch square baking pan and heat for 10 minutes. Pour batter into hot pans and bake for 15 to 20 minutes. Makes 12 servings.
